Great side dish with chicken or fish. Ingredients:
3 tablespoons unsalted butter |
1 clove garlic, crushed |
1 teaspoon finely grated orange zest |
2 large beefsteak tomatoes or 4 firm plum tomatoes |
salt and pepper |
Directions:
1. Soften the butter and blend with the crushed garlic, grated orange zest and seasoning. 2. Chill for a few minutes. 3. Preheat the oven to 400. 4. Cut the tomatoes in half crosswise. 5. Place the tomatoes in an ovenproof dish and spread the butter equally over each tomato half. 6. Bake the tomatoes for 15-25 minutes, depending on the size of the tomato halves, until just tender. 7. Serve. |
