Easy, fast and tasty.; wonderful summer side dish. I like this particularly with baked glazed fish. This will keep your kitchen cool and give you extra time with the family. Ingredients:
2 tablespoons soy sauce |
1 teaspoon toasted sesame oil |
1/4 teaspoon cracked black pepper |
1 tablespoon cooking oil or peanut oil |
3 cloves garlic, minced |
2 cups red, yellow, and/or green sweet peppers, cut into bite-size strips; carrot slices; and/or fresh pea pods (stems and ends removed) |
1 medium onion, sliced and separated into rings |
2 cups sliced fresh mushrooms |
sesame seeds, toasted |
Directions:
1. In a small bowl stir together soy sauce, sesame oil, and black pepper; set aside. In a 12-inch skillet or wok heat cooking oil over high heat for 1 minute. Add garlic; cook and stir for 1 minute. Add sweet pepper and onion; cook and stir for 3 minutes. Add mushrooms; cook and stir for 2 to 3 minutes more until vegetables are crisp-tender. 2. Add soy sauce mixture to skillet or wok. Cook and stir to coat vegetables. Transfer mixture to a serving dish. Sprinkle with sesame seeds. |
