Garlic And Parmesan Risotto |

This is a very simple and tasty version of a classic risotto Ingredients:
1 1/2 cups rice (est, though any non-parboiled will work) |
5 cloves garlic |
a small bunch of parsley, minced |
3 egg yolks |
olive oil |
salt and pepper to taste |
1 c freshly grated parmigiano |
Directions:
1. Boil the rice in abundant lightly salted water until it reaches the chewy al dente stage. While this is happening, crush the cloves of garlic and whisk the yolks in a bowl with them. 2. When the rice is done drain it, and stir it immediately into egg yolks - the heat of the rice will cook them - seasoning everything to taste with salt, pepper, and a drizzle of olive oil. Finally, add the minced parsley and grated cheese mixing well to incorporate. Serve Immediately. |
