Garlic And Onion Bruschetta |

Delicious and refreshing Ingredients:
* 6 or 7 ripe plum tomatoes (about 1 1/2 lbs) |
* 3 cloves garlic, minced |
* 1/2 medium red onion chopped |
* 1 tbsp extra virgin olive oil |
* 1 teaspoon balsamic vinegar |
* 7 fresh basil leaves, chopped. |
* salt and freshly ground black pepper to taste |
* 1 baguette of bread (your choice, i like french) |
* 1/4 cup olive oil |
Directions:
1. preheat oven to 450 degrees 2. peel the tomatoes ( you can do this by boiling them for a short time) 3. remove juice and seeds from tomatoes 4. chop tomatoes,and add to a bowl. Combine garlic, 1tbsp of extra virgin olive oil, vinegar and basil. 5. slice baguette into about 1/2 inch thick slices 6. coat each side of bread with olive oil (use a brush) 7. toast break on top rack of oven for about 5 minutes 8. take bread pieces out and put tomato mixture on top |
