Garlic And Olive Oil Couscous

A quick and tasty couscous salad!
Ingredients:
couscous
1-1/4 cups water or broth
1 cup couscous
2 tsps. butter or margarine (optional)
1/2 tsp. pepper (optional)
1-1/2 tsp. parsley flakes or freshly chopped
ingredients
2 - 3 garlic cloves, minced
1 tbsp. extra virgin olive oil
1/2 tsp. dried thyme leaves
1/2 tsp. paprika
1/4 tsp. black pepper , freshly ground
Directions:
1. Bring water to a boil.
2. Add couscous, butter, pepper and parsley flakes.
3. Cover and remove from heat.
4. Let stand for 10 minutes.
5. Topping:
6. In a shallow pan, heat oil.
7. Sauté garlic until it begins to lightly brown.
8. Add rest of spices, cook for 30 seconds and remove from heat.
9. (Alternately, you could use ready made roasted garlic olive oil ,
10. and add the thyme and pepper).
11. Mix topping with couscous and serve immediately.
12. Makes 4 servings
