A low-fat carrot side dish. Ingredients:
1 lb carrot, peeled and cut into 1-inch slices |
1 cup chicken broth |
1 tablespoon margarine |
1 tablespoon shallot, minced |
1 teaspoon sugar |
1/8 teaspoon black pepper |
2 -3 garlic cloves, minced |
1 tablespoon lemon juice |
Directions:
1. Combine everything EXCEPT the lemon juice in a medium saucepan; cook, uncovered, over medium heat, approximately 15-20 minutes. 2. Stir often until carrots are tender and a little liquid is remaining. 3. Stir in the lemon juice and serve. |
