This is a recipe by the Barefoot Contessa that I made today. (I never put a recipe by someone else out there if I haven't tried it on my family first.) Anyway, we had it a side dish and, just like my recipe tags say, it was pretty and aromatic AND very good. Read more . With fresh toamtoes right around the corner, you can use them cut into chunks instead of the grape tomatoes. I used a mixture of both kinds today with excellent results. Ingredients:
3-tbspn good olive oil |
4 cloves fresh garlic, pressed in garlic press |
(*ina's recipe called for just 2 cloves but we love garlic.) |
2-pints cherry tomatoes or grape tomatoes |
2-tbspn chopped fresh basil |
2-tbspn chopped fresh flatleaf parsley |
2-tspn chopped fresh thyme |
kosher salt to taste |
freshly ground black pepper to taste |
Directions:
1. Heat the olive oil in a saute pan large enough to hold all of the tomatoes in one layer. 2. Add the tomatoes. 3. Press the garlic into the saute pan and let cook for a couple of minutes 4. Add the basil, parsley, thyme, salt and pepper 5. Rduce the heat to low and cook for 7 minutes. 6. Serve at room temperature. 7. -Susana |
