Mashed potatoes with garlic, olive oil, and basil. Ingredients:
2 lbs. yukon gold potatoes |
5 cloves garlic, peeled and crushed |
10 basil leaves |
1/4 cup extra virgin olive oil |
1 cup skim milk |
1 salt and pepper |
Directions:
1. Boil potatoes until soft. 2. Drain potatoes and mix with hand mixer. Return potatoes to pot over low heat. Slowly add olive oil and stir using wooden spoon. 3. Add milk and beat until fluffy. Stir in chopped basil and add salt and pepper to taste. Serve immediately. |
