Different idea with the anchovies. Best to rinse anchovies and pat dry before cutting up. Ingredients:
1 bunch broccoli |
1 tsp extra virgin olive oil |
1 can anchovies (50 g) drained |
and chopped |
4 x cloves garlic crushed |
1/2 x sweet red pepper chopped |
1/4 cup chopped fresh parsley |
1 tbl lemon juice |
1/4 tsp freshly ground black pepper |
freshly grated parmesan cheese (optional) |
Directions:
1. Cut broccoli into florets. 2. Steam 3. Drain. 4. Place in ice bath so it does not lose color 5. Meanwhile, heat oil in a nonstick skillet. 6. Stir in anchovies and garlic, then red pepper. 7. When fragrant, warm and starting to soften add broccoli. 8. Saute until combined, stir in lemon juice, and pepper and parsley. Top with grated parmesan if desired before serving. |
