Low Fat Vegitable Crustless Quiche Ingredients:
1 1/2 cup egg substitute |
3 large eggs |
1 1/2 cup shredded reduced fat sharp cheddar cheese |
1 1/2 cup shredded monteray jack cheese |
1/2 cup skim milk |
1/2 cup flour |
1 tsp baking powder |
16 oz breakstone fat free cottage cheese |
4 cups sliced zucchini |
3 cups simply pottatoes |
1 cup chopped green pepper |
2 oz sliced mushrooms |
2 sliced tomatoes |
Directions:
1. Beat Egg substitute and eggs in large bowl until fluffy 2. add 3/4 cheddar, 3/4 jack, milk, flour, baking powder, and cottage cheese 3. Heat large non-stick skillet over meadium heat 4. add zucchini and next three ingrediants 5. simmer 5 min or untill tender 6. place all ingreadients into egg and cheese mixture 7. stir 8. place all ingredients into baking pan, add remaining cheeses on top, place tomatto slices on top 9. bake at 400 degrees for 15 minutes 10. lower to 350 for 40 minutes (or untill lightly brown) |
