                    Southern Living; when the garden overflow. Ingredients: 
                    
                        
                                                4 small zucchini, sliced  |  
                                                1 small onion, chopped  |  
                                                1 medium green pepper, chopped  |  
                                                2 tablespoons butter or 2 tablespoons margarine, melted  |  
                                                1 1/2 cups fresh corn  |  
                                                1 large tomato, coarsely chopped  |  
                                                1 teaspoon salt  |  
                                                1/2 teaspoon pepper  |  
                                                1 cup shredded cheddar cheese  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Saute first 3 ingredients in butter in a skillet. 2. Cover, reduce heat to medium, and cook 3 minutes. 3. Stir in corn and tomato; cover and cook an additional 5 minutes or until vegetables are crisp-tender. 4. Add salt and pepper, tossing gently. 5.
