2-tspn-unsalted butter+ dots on top |
1-medium onion(diced) |
1-red bellpepper(diced) |
2-garlic cloves(minced) |
sea salt and fresh ground pepper to taste |
3-ears fresh corn cut off the cob(this takes very little time to do and worth it) |
2-large red tomatoes(sliced(slightly thick) |
1-cup bread crumbs |
Directions:
1. Saute in pan 2 tspn butter add onion,bellpeppergarlic and corn 2. sea salt and pepper to taste) 3. in baking dish spray or butter dish 4. 1st layer sliced tomatoes,then cover with saute mixture 5. then repeat, with second layer tomatoes and remaining sauted veggies and top with bread crumb and butter dots 6. bake350 for 35-40 minutes |
