For a special diet I'm on (to lower cholesterol) I'm supposed to have eggs & veggies for breakfast. This is what came out this a.m. Ingredients:
1 egg |
1 t. chopped dill |
1 t. chopped parsley |
1 t. chopped basil |
1/2 cup roughly chopped zucchini |
1/4 c. small dice onion |
1/4 c. chard or any greens, sliced thinly |
optional: curry powder, cayenne, and as a garnish fresh squeezes of lime juice |
all fresh from garden if you can....not dried if you can help it |
Directions:
1. Saute onion and zucchini 2. add chard, stir occasionally 3. stir in herbs quickly and push to side of pan 4. crack egg into pan and let cook slowly for a little bit 5. as it starts to firm up, break it up a little 6. finally stir all together until egg is done to your liking 7. note: I like my eggs not too scrambled so I like to see some nice yellow yolk |
