Ingredients:
1 tbl evoo
3/4 cup red bell pepper strips
1/2 cup sliced onion, separated into strips
2 garlic cloves, crushed
1 3/4 c thinly sliced zucchini
11/2 c thinly sliced summer squash
1 3/4 c chopped plum tomoato
1/4 c thinly sliced fresh basil (or dried to taste)
1 tsp lemon pepper
1/4 tsp salt
1/4 c grated parmesan cheese
Directions:
1. Heat oil in a large skillet over medium-high
2. Add bell pepper, onion and garlic and saute 2-3 minutes
3. Add squashes and sautee until crisp tender, about 5 - 6 minutes
4. Add tomato, basil, lemon pepper and salt
5. Saute 1 minute or until heated through
6. Remove from heat and sprinkle with cheese
7. Serve immediately
