1 tbl evoo |
3/4 cup red bell pepper strips |
1/2 cup sliced onion, separated into strips |
2 garlic cloves, crushed |
1 3/4 c thinly sliced zucchini |
11/2 c thinly sliced summer squash |
1 3/4 c chopped plum tomoato |
1/4 c thinly sliced fresh basil (or dried to taste) |
1 tsp lemon pepper |
1/4 tsp salt |
1/4 c grated parmesan cheese |
Directions:
1. Heat oil in a large skillet over medium-high 2. Add bell pepper, onion and garlic and saute 2-3 minutes 3. Add squashes and sautee until crisp tender, about 5 - 6 minutes 4. Add tomato, basil, lemon pepper and salt 5. Saute 1 minute or until heated through 6. Remove from heat and sprinkle with cheese 7.
