What a delicous dish of sautéed veggies, soooo good!! Ingredients:
1/2 cup crisco corn oil |
1 large onion, quartered, then halved |
2 medium zucchini, cut into 1/2 inch slices |
2 medum yellow squash, cut into 1/2 nch slices |
4 ounces mushrooms, halved |
2 teaspoons dried oregano |
salt and pepper |
1/3 cup grated parmesan cheese |
Directions:
1. In a large skillet with a lid, heat Crisco oil over medium high heat. Add onion. Saute 3 minutes. Add zucchini, yellow squash, mushrooms, oregano and salt and pepper; sauté 5 minutes more. 2. Cover and cook until tender, about 10 minutes. Sprinkle with Parmesan cheese; serve immediately. |
