This is a good salsa to use as a topping for salad or grilled chicken Ingredients:
5 roma tomatoes |
1 small sweet onion (texas sweet or vadalia) |
1 clove of garlic |
1 jalapeno pepper |
1 anaheim pepper |
1 teaspoon cumin |
1 teaspoon sea salt |
1 teaspoon of cilantro (i use the garden herb paste found in the produce section - fresh can be used as well) |
1/2 fresh lime |
Directions:
1. Finely chop your tomatoes, onion, garlic and peppers (keep the juice from the tomatoes and the Jalapeno seeds to use in your salsa) 2. Combine your vegetables in a glass bowl (this bowl should have a top as you'll keep the salsa in the bowl until thoroughly enjoyed) 3. Add cumin and sea salt (to taste) 4. Add fresh lime juice and cilantro last and mix all ingredients well 5. Chill salsa in the refrigerator for at least an hour 6. Serve with your favorite chip (Mission Style Tortilla Strips are my fav) or over grilled chicken |
