Garden Salad With Honeyed Popcorn |

A friend passed on this rather unusual but delicious recipe. Ingredients:
2 butter lettuce |
2 avocados, sliced |
2 mangoes, sliced |
1 bunch fresh asparagus |
2 lebanese cucumbers |
250 g caramel corn |
1/2 cup dried cranberries |
1/2 cup olive oil |
1/2 cup apple cider vinegar |
2 tablespoons soya sauce |
1 tablespoon curry powder |
4 tablespoons brown sugar |
1/4 red onion, chopped |
Directions:
1. For the dressing process all ingredients in food processor. 2. Steam asparagus 1 - 2 minutes. Drain and refresh in cold water. 3. Place lettuce leaves on serving platter. 4. Lay cut avocado, mango, asparagus and cucumbers on top. 5. Just before serving put on the cranberries, pour over the dressing and then add the caramel popcorn. |
