I had a hankering for a nice plate of spaghetti and meat balls and saw all the lovely oregano, basil and sage out in my garden. Here is what I put together. Ingredients:
3/4 lb 93/7 lean ground beef |
1/2 cup yellow onions - diced |
3 slices light style soft wheat bread |
1 egg |
3 cloves garlic clove |
1 tbsp fresh oregano |
1 tbsp basil, fresh |
1 tbsp sage, fresh |
Directions:
1. Preheat oven to 350 and line a baking sheet with aluminum foil. 2. Grate the slices of bread into crumbs. Food processor makes quick work of this. I so this with the stale end of a loaf then put it in an air tight container in the refridgerator. Using my choice of bread I cut many calories and still get the job done. 3. Mince the fresh herbs, onion and garlic. You don't want any big lumps or your meatballs won't hang together so well. 4. Combine all the rest of the ingredients into a large mixing bowl. I use my well washed hands and try to remember where I put my wedding rings after. 5. Using a table spoon, scoop a bit of the mixture and roll in your hands to form a ball and place it on the cooking sheet. Repeat until it is all gone. 6. Bake for 30 - 40 minutes. 7. Serving suggestions: In marinara over noodles, meatball subs as an appetizer. |
