Garden-Fresh Gazpacho is a great beginning to a summer supper. Ingredients:
6 to 8 tomatoes, chopped |
1 onion, finely chopped |
1 cucumber, peeled and chopped |
1 green pepper, chopped |
2 tablespoons fresh parsley or cilantro, chopped |
1 clove garlic, finely chopped |
1 to 2 stalks celery, chopped |
2 tablespoons lemon juice |
salt and pepper to taste |
4 cups tomato juice |
4 drops hot pepper sauce |
optional: sour cream |
Directions:
1. Combine all ingredients except sour cream, if using, in a large lidded container or gallon-size Mason jar. Refrigerate until well chilled. Dollop servings with sour cream, if desired. |
