Garden-Fresh Gazpacho is a great beginning to a summer supper.
Ingredients:
6 to 8 tomatoes, chopped
1 onion, finely chopped
1 cucumber, peeled and chopped
1 green pepper, chopped
2 tablespoons fresh parsley or cilantro, chopped
1 clove garlic, finely chopped
1 to 2 stalks celery, chopped
2 tablespoons lemon juice
salt and pepper to taste
4 cups tomato juice
4 drops hot pepper sauce
optional: sour cream
Directions:
1. Combine all ingredients except sour cream, if using, in a large lidded container or gallon-size Mason jar. Refrigerate until well chilled. Dollop servings with sour cream, if desired.
