Light and refreshing. Ingredients:
3 cups fresh green beans, snapped |
2 cups fresh corn kernels |
1/2 cup shredded carrots |
1/2 green pepper, seeded, chopped |
1/4 cup chopped sweet or green onions |
3 small radishes, sliced |
1 medium tomato, seeded, chopped |
3/4 to 1 cup italian salad dressing |
Directions:
1. In boiling water, cook beans for about 10 minutes until tender-crisp. During last 3 minutes of cooking time, add corn. Drain vegetables 2. In large bowl, combine beans, corn, carrots, green pepper, onions, radishes and tomato. Toss lightly. 3. Pour salad dressing over vegetables. Toss lightly. Cover and refrigerate at least 4 hours or overnight to chill thoroughly. 4. Toss lightly again to serve. |
