a nice summer salad served hot. best if fresh veggies are used. Ingredients:
3 tablespoons butter |
1 garlic clove, pressed |
1 medium onion, chopped fine |
1 bell pepper, chopped |
1 1/2 lbs yellow squash, thinly sliced |
2 cups corn, cut from cob |
2 tomatoes, diced |
1 teaspoon salt |
2 teaspoons basil, fresh chopped |
pepper, to taste |
1 pinch sugar |
1/3 cup water |
Directions:
1. In large skillet, melt butter and saute' the onion, bell pepper and garlic till soft. 2. add squash and cook briefly before stirring in corn, tomatoes and seasonings. 3. cook a couple more minutes and put into a buttered 3 qt casserole dish, add water. 4. bake covered for 30 minutes 350 degrees F. 5. remove cover and bake another 30 minutes. |
