This is a great lunch salad either with greens or on low-carb bread. Ingredients:
1 cup chick peas |
2 hard-boiled eggs |
1/8 cup scallions |
1/4 cup red pepper |
1 tbsp reduced fat mayonnaise |
2 tbsp sweet relish |
1 tsp mustard |
Directions:
1. Mash eggs and beans with potato masher. Add all other ingredients and mix well. Chill for at least 2 hours to allow flavors to blend. Serve in warmed pita halves. |
