A quick, flavorful salad. Ingredients:
2 cups canned garbanzo beans, drained and rinsed |
2/3 cup black olives, quartered |
1/2 cup red bell pepper, diced |
1/3 cup green onion, sliced |
1/8 cup cilantro, chopped |
2 tablespoons extra virgin olive oil |
1 1/2 tablespoons balsamic vinegar |
1 hard-boiled egg, diced |
salt and pepper |
Directions:
1. In a medium bowl combine all ingredients except egg. 2. Toss well. 3. Gently stir in egg. 4. Serve. |
