4 cups chopped fresh parsley |
2 (15 ounce) cans garbanzo beans, drained, rinsed |
1 green bell pepper, chopped |
1/2 cup green onion, sliced |
1 large tomato, seeded and diced |
1/4 cup lemon juice |
1 garlic clove, minced |
2 tablespoons olive oil |
Directions:
1. Combine parsley, beans, green peppers, green onions and tomatoes in a bowl. 2. Combine lemon juice and garlic in a small bowl, then whisk in olive oil. 3. Toss dressing with salad. Season to taste with salt and pepper. |
