It only takes a few minutes to prepare and it is great comfort food Ingredients:
2 cups cooked chick peas |
1 medium onion |
2 sprigs fresh rosemary coarse chopped |
2 cloves minced garlic |
1/4 teaspoon oregano |
black pepper to taste |
2 tablespoons olive oil |
1/2 cup cherry tomatoes or grape tomatoes cut in half |
1/2 cup crumbled feta cheese |
Directions:
1. fine dice onion 2. heat olive oil in hot saute pan add onions, cook for 4 minutes on medium heat 3. add garlic then add chick peas rosemary, oregano, black pepper 4. saute for 2 minutes 5. add tomatoes and feta toss for 30 seconds pour on to serving dish 6. cheese should just be warmed not melted 7. yum, enjoy |
