These are delish with a yogurt, sour cream or pesto topping. A great way to use left over cooked sweet potatoes.Spice them up as much as you want. Garam masala gives great flavor plus as well as the coconut oil too! Read more ! Form size as desired: small patties for appetizer, larger for a side or main dish. Ingredients:
4 cooked sweet potatoes mashed |
2 tsp garam masala seasoning or to taste |
salt and pepper to taste |
1 egg |
panko bread crumbs to bind ( honey flavor is great too ) |
organic extra virgin coconut oil to cook |
topping: yogurt, pesto, chopped cilantro |
Directions:
1. Combine, mashed cooked sweet potatoes with seasonings to taste 2. Blend in egg 3. Stir in enough Panko bread crumbs just to bind ( perhaps 1/2 cup ) 4. Form into patties by hand 5. Fry in a coconut oil until golden brown on both sides ( I use a non stick pan ) 6. Serve hot or warm 7. Top if desired with yogurt, pesto, sour cream etc 8. Note: these reheat well in the micro |
