Garam Masala is a very aromatic combination of spices that are an integral part of most Indian dishes. This recipe uses whole spices which are ground in a coffee grinder. Ingredients:
30 green cardamom pods |
15 cloves |
5 black cardamom pods |
1/2 whole nutmeg |
4 cinnamon sticks |
5 tablespoons cumin seeds |
1 tablespoon fennel seed |
1 teaspoon black peppercorns |
2 tablespoons coriander seeds |
1/2 teaspoon fenugreek seeds |
Directions:
1. Dry roast all spices in a heavy bottomed pan or skillet over very low heat. Stiring the spices constantly for about 3 minutes. Remove pan from fire as soon as you can smell the aroma of spices. 2. Dry grind the spices into fine powder in a electric coffee grinder or a blender. 3. Allow powder to cool. 4. Store in an air tight container. |
