1 cup bulgur wheat or 1 cup bulgur |
1 onion, chopped |
1 cup fresh mushrooms, chopped |
1/2 cup pecans, chopped |
1/2 cup raisins |
1/2 cup dried fig, chopped |
1 teaspoon lemon zest |
1/2 lemon, juice of |
1 tablespoon olive oil |
1 teaspoon thyme leaves |
1/2 teaspoon cinnamon |
salt and pepper |
Directions:
1. Cook bulgur or wheat kernels until soft-usually 2 cups of water to 1 cup of grain is sufficient. 2. Saute onions until translucent, add mushrooms and saute 2 minutes more. 3. Add thyme and cinnamon. 4. Mix onion and mushroom mixture together with bulgur or wheat. 5. Add pecans, raisins, figs and lemon zest. 6. Season with lemon juice, salt and pepper. |
