Game Day Spicy Chicken Chili |

Here's a healthier alternative to your typical chili. Ingredients:
1 tablespoon extra virgin olive oil |
1 onion, finely chopped (red or brown) |
4 large garlic cloves, minced |
1 lb ground chicken |
1 (15 ounce) can diced tomatoes |
1 (15 ounce) can kidney beans, drained |
1 (15 ounce) can pinto beans, drained |
1 tablespoon chipotle chili powder |
1 teaspoon cayenne pepper |
1/2 teaspoon red pepper flakes |
2 teaspoons brown sugar |
kosher salt, to taste |
1 bunch cilantro, stems discarded and leaved chopped |
Directions:
1. In a large pot, heat the oil over medium- high heat. Add the onions and garlic and cook until soft and fragrant, about 2 minutes. 2. Turn the heat up to high and add the ground chicken. Break it up into small pieces and cook until no longer pink. 3. Add the tomatoes, beans, spices and brown sugar. Add salt, to taste. 4. Remove from the heat and stir in the cilantro. Serve immediately. |
