Game Day Baked Potato Buffet |

A great and easy side dish to serve for large groups. The buffet style allows guests to top their own baked potatoes. Use one potato per person, recipe can be changed to meet your number of guests. Potatoes can be barbecued or baked in the oven. Ingredients:
8 russet potatoes |
1/2 cup olive oil |
1 cup butter |
8 slices bacon, cooked, cumbled |
2 cups cheddar cheese, shredded |
1 cup green onion, chopped |
2 cups sour cream |
2 cups salsa |
2 (10 ounce) cans chili with beans, heated |
1 teaspoon salt |
Directions:
1. Preheat the oven to 300 degrees F (150 degrees C). Scrub the potato, and pierce the skin several times with a knife or fork. Rub the skin with olive oil, then with salt. 2. Place the potato in the preheated oven, and bake for 90 minutes, or until slightly soft and golden brown. 3. Serve the potatoes along side all the toppings. |
