What a Delightful dish! For anyone that loves shellfish just an irresistable way to enjoy shellfish. Serve over rice pilaf or pasta. Ingredients:
16 large scallops |
16 large shrimp |
1/4 cup olive oil |
1/2 cup irish mist liqueur |
3 tablespoons onions, diced |
1 cup mushroom (button, sliced) |
2 cups heavy cream (32%) |
salt and pepper |
4 teaspoons parsley, chopped |
Directions:
1. Dry scallops and shrimp on paper towels. In a large pan heat oil and Irish Mist; sear shellfish until 3/4 done, about 3 minutes, turning once. Remove and keep warm. 2. Add onion and mushrooms to pan; cook until limp. Stir in cream and cook gently until liquid is reduced an slightly thickened. Season to taste with salt and pepper. 3. Return scallops and shrimp to pan to finish cooking, 2 minutes. Stir in parsley. |
