Costa Rican rice dish (It is vegetarian)
Ingredients:
1 medium onion
2 garlic cloves
3 cups white rice (day old is best)
2 cups black beans
1 teaspoon cumin
1 teaspoon coriander
2 -3 tablespoons lizano salsa
fresh cilantro
green onion
salt and black pepper (to taste)
olive oil
Directions:
1. Sautee vegetables in oil.
2. Add spices and beans.
3. Stir.
4. Add rice.
5. Mix it all up on the stove.
