Costa Rican rice dish (It is vegetarian) Ingredients:
1 medium onion |
2 garlic cloves |
3 cups white rice (day old is best) |
2 cups black beans |
1 teaspoon cumin |
1 teaspoon coriander |
2 -3 tablespoons lizano salsa |
fresh cilantro |
green onion |
salt and black pepper (to taste) |
olive oil |
Directions:
1. Sautee vegetables in oil. 2. Add spices and beans. 3. Stir. 4. Add rice. 5. Mix it all up on the stove. |
