This will make a 10-inch log. Ingredients:
1 (15 1/2 ounce) can red salmon |
1 (8 ounce) package cream cheese, softened |
1 tablespoon fresh lemon juice |
2 teaspoons grated yellow onions |
1 teaspoon prepared horseradish |
1/4 teaspoon bottled liquid smoke seasoning or 1/4 teaspoon worcestershire sauce |
1/2 cup chopped pecans |
3 tablespoons minced fresh parsley, plus sprigs of fresh parsley for garnish |

Directions:
1. Drain the salmon and flake the meat with a fork. 2. Combine the salmon, cream cheese, lemon juice, onion, horseradish, and liquid smoke in a large bowl and stir well. 3. Chill for several hours or overnight. 4. Place the salmon mixture on a serving platter and shape it into a log. 5. Combine the pecans and parsley in a small bowl. 6. Roll the log in the pecan mixture, pressing excess into the sides. 7. Chill several hours. 8. Serve on a platter surrounded by the sprigs of parsley and crackers. |
