175 g shortcrust pastry |
45 ml jam (3 tbsp) |
25 g butter |
1 egg |
50 g caster sugar |
100 g desiccated coconut |
2 1/2 ml baking powder (1/2 tesp) |
Directions:
1. Roll out pastry and line 20cm sandwich tin. Prick base and spread with jam. 2. Melt butter, stir in egg, sugar, coconut and baking powder. Mix well. 3. Spread mixture into pastry case. 4. Bake 350F 30-35 minutes. |
