This recipe was inspired by all the wonderful flavors of the south. A down home, comfort food, A wonderful gumbo, with everything except okra. Ingredients:
2 chicken breasts (cut into 2 squares |
1 lb. kielbasa |
1 lb. fresh, wild caught gulf shrimp (peeled and deveined) |
1 can diced tomatoes |
2 tbs. corn starch |
1 can delmonte diced tomatoes w/ chilies |
1 can mexican corn, drained |
3 stalks of celery chopped |
1 cup of green and red sweet peppers mixed & chopped |
2 medium onions diced |
2 small zucchini |
1/4 cup fresh basil |
2 bay leaves |
1 tbs. sugar |
1 tbs. minced garlic |
1 tbs. parsley |
couple shakes of thyme |
1 tsp. cayenne pepper |
juice of 1/2 lemon |
1 tsp. chicken base |
1/2 tbs. gumbo file' or more to taste |
salt and pepper to taste |
a little chicken broth if it gets too thick |
Directions:
1. Place all ingredients in crock pot, except shrimp, I add that about 1/2 hour before serving. 2. Cook for 5 hours. 3. Serve over rice with cornbread 4. Enjoy!!!! |
