Malaysian salad with very healthy ingredients (not including peanut sauce!)
Ingredients:
100 g potato
100 g carrot
3 large eggs
100 g tofu
100 g bean sprouts
100 g cucumber
200 g lettuce
Directions:
1. Thick slice potatoes and cook until just done (5 min.)
2. Thick slice carrots and cook until just done (3 min.)
3. Plunge potatoes and carrots into cold water, drain and refrigerate to cool down in large salad bowl.
4. Slice cucumber and halve pieces and add to bowl.
5. Slice or tear lettuce into small pieces and add to salad bowl.
6. Hard boil eggs (15 min.) in pot and cool down with ice-cold water.
7. Wash bean sprouts, remove scraggly ends and place in separate bowl.
8. Pour boiling water onto sprouts, let stand for 1 minute and drain.
9. Add sprouts to salad bowl and toss.
10. Shell and slice eggs, leaving in side dish for each diner to add on their own.
11. Prior to serving, warm up tofu in frying pan on low heat.
12. Cut cooked tofu into small cubes and distribute on top of salad bowl.
13. Serve with peanut sauce (see other recipe).
