Makes 10 to12 fritters . The word fritter comes from the Latin frying by way of Old French and Middle English. Fritters are extremely popular road side snacks all over South Asia and are commonly referred to as Pakora / Pakoda or Bhaji . Read more . But making it with Zucchini is unique . I have uploaded both the western ( non Spicy ) and fusion ( Spicy version ) , which I tried . Ingredients:
2 medium zucchinis , grated and water squeezed out . |
1 l egg , beaten |
100 g flour and 1/2 tsp baking pwd - sifted |
for fusion ( spicy version ) |
1/2 big onion sliced |
1 small green capsicum , sliced |
1 large fresh red chilli - sliced |
1 tsp black pepper pwd |

for western ( non spicy version ) |
2 shallots , sliced |
1/2 red capsicum , sliced |
1 tsp white pepper pwd |
6 tbsp olive oil or grape seed oil for shallow frying |
sour cream or yogurt |
Directions:
1. Mix everything in a bowl . 2. Use a fork to mix well . 3. Then grate and remove the excess liquid and add the zucchini . 4. Mix well and check the salt . 5. Heat 2 tbsp of oil first and scoop the batter into the oil and flatten it abit . 6. Shallow fry in batches adding the oil as you need along . 7. Serve hot with sour cream ( for western ) and Thick yogurt ( for fusion ) |
