Fusilli with Fresh Tomato Sauce |

This delicious make-ahead pasta sauce is loaded with fresh flavor and a few top-notch ingredients. Pasta night will never be the same. Ingredients:
4 1/2 cups chopped tomato |
1/2 cup sliced fresh basil |
1/2 cup chopped onion |
2 tablespoons olive oil |
1 1/2 tablespoons balsamic vinegar |
3/4 teaspoon salt |
3/4 teaspoon freshly ground pepper |
1 pound fusilli (corkscrew pasta), uncooked |
3 tablespoons freshly grated romano cheese |
Directions:
1. Combine first 7 ingredients in a large bowl. Cover and chill at least 2 hours. (May chill overnight, if desired.) 2. Cook pasta according to package directions, omitting salt and fat; drain. Add cooked pasta to tomato mixture, tossing lightly. Sprinkle with cheese. |
