Found this in a magazine.Cut out most of the oil it called for as it really didn't need that much. Great main entree. Or a great side dish with chicken or seafood. Ingredients:
16 ounces fusilli (i like the long kind broken in half) |
2 cloves garlic, minced |
1/2 teaspoon crushed red pepper flakes |
1 tablespoon olive oil |
1 cup low-sodium low-fat chicken broth |
1 head fresh broccoli, cut in flowerets |
grated cheese |
Directions:
1. Prepare pasta according to package directions. 2. In a medium skillet, saute garlic& red pepper in oil about 5 mimutes, until garlic is lightly browned. 3. add broth keep warm. 4. Add broccoli to pasta water the last 2-3 minutes. 5. Drain pasta& broccoli. 6. Return to pot. 7. Pour garlic mixture over pasta. 8. Toss to coat well. 9. Place in serving bowls. 10. Dust with cheese if desired. 11. Serve 8. |
