Funghi Fritti (sauteed Mushrooms) |

This is a traditional side dish for most Italians for Thanksgiving dinner, but I make it all through the year. Ingredients:
1 lb mushrooms of your choice, sliced or quartered |
3 cloves garlic, finely chopped |
1/4 tsp crushed red pepper flakes (optional) |
salt to taste |
1/4 tsp. of parsley chopped |
2 tbsp extra virgin olive oil |
Directions:
1. Wipe the mushrooms, with a damp cloth. 2. Saute' the garlic and pepper flakes in oil for two minutes on low 3. Add the mushrooms parsley and salt and saute' over a low heat for ten to fifteen minutes. |
