Vegetarian recipe rich with protein Ingredients:
4 cups lentils |
2 cups brown rice |
1/2 cup barley |
2 cups vegetable broth |
1 cup oatmeal |
4 eggs |
1/4 cup olive oil |
1 cup onions |
1/4 cup shredded carrots |
1 tsp salt |
1 tsp pepper |
1 tbsp cayenne pepper |
1 cup italian bread crumbs |
Directions:
1. Cook lentils 1 hour, this will help with consistency (2 steps less than mushy) 2. Benefit: protein, appearance (use different colored lentils, yellow-brown-orange) 3. Boil vegetable broth and brown rice 4. Benefit: complete protein 5. Benefit: flavor, rice preparation, moisture. 6. Mix lentils and brown rice in large bowl 7. Add olive oil 8. Benefit: consistency, moistness, preparation (oils help for crispy outside) 9. Add eggs 10. Protein, consistency - sponge between the crevices to hold together. 11. Add spices 12. Mix all together in large bowl 13. Add vegetables 14. Benefit: consistency, fiber, vitamins, appearance 15. Mix in oatmeal gradually, use more or less to manage consistency 16. multi grain, Recommend: Trader Joes multi grain, or the like, Benefit: 2+ gr more protein than oatmeal 17. first batch will help determine your preference 18. Form 4 inch diameter patties 19. Press into Italian breadcrumbs, add any preferred spices. 20. Benefit: flavor, consistency and preparation 21. Freeze, individually wrapped for quick use 22. Broil in oven at 400 degrees, (toaster oven recommended for economics), spray with olive oil custom for crispness 23. Barbeque, brush/spray (Mr. Misto) olive oil on to each side. 24. Brown pattie on stove (best when thawed - If frozen, cover and brown at low heat) |
