Fudgy Peanut Butter Chip Muffins |

What a wonderful tasting snack, dessert, or maybe even breakfast? It's got to be healthy with applesauce and oats in it - right? Ingredients:
1/2 cup applesauce |
1/2 cup quick-cooking rolled oats |
1/4 cup butter, softened |
1/2 cup granulated sugar |
1/2 cup light brown sugar, packed |
1 egg |
1/2 teaspoon vanilla extract |
3/4 cup flour |
1/4 cup cocoa or 1/4 cup dutch-processed cocoa powder (recommend hershey's) |
1/2 teaspoon baking soda |
1/4 teaspoon cinnamon (optional) |
1 cup peanut butter chips (or semi-sweet chocolate for variety) |
powdered sugar (optional) |
Directions:
1. Mix applesauce and oats in a small bowl. 2. Beat butter, sugars, egg and vanilla until well blended. 3. Stir in the applesauce mixture, blending well. 4. Stir together the next 4 dry ingredients and blend into the butter mixture. 5. Fold in the peanut butter chips. 6. Fill 12 paper lined muffin cups 3/4 full of batter. 7. Bake in a 350 degree oven for 22-26 minutes or until a toothpick inserted in the middle comes out almost clean. 8. If desired, sprinkle with powdered sugar when slightly cooled. |
