A quick dry mix for chocolate brownies, with yummy wholewheat flour! Makes enough for 2 pans. Ingredients:
2 cups sugar |
1 cup flour |
1/3 cup whole-wheat pastry flour |
1 cup unsweetened cocoa powder |
2 tbsp cornstarch |
3/4 teaspoon salt |
1 cup shortening |
for brownies |
1 egg |
1 teaspoon vanilla |
1/2 cup chopped nuts or chocolate chips (optional) |
Directions:
1. Whisk sugar, flour, cocoa, cornstarch and salt in large mixing bowl. 2. Cut in shortening until mixture resembles coarse cornmeal. 3. Store in covered container up to 6 weeks at room temperature. Freeze for longer storage. 4. To make Brownies: 5. HEAT oven to 350ºF. Spray an 8x8-inch baking pan with no-stick spray. 6. In large mixing bowl, beat egg and vanilla. 7. Stir in 3 cups Brownie Mix until nearly smooth. 8. Fold in nuts or chocolate chips if using. 9. Spread in prepared pan. 10. Bake 25-30 minutes. |
