One of my grandmothers makes this and it is always good.Spicey cabbage with beans & cornbread hits the spot. Ingredients:
1 head mountain cabbage |
6 slices fat back |
1/4 tsp salt |
1/4 tsp black pepper |
crushed red pepper |
sugar |
water |
Directions:
1. Slice cabbage in long thin strips( remove cobb).Fry fatback mid-high heat in large skillet until golden brown. Remove fatback.Add cabbage let it pile up . Salt & pepper to taste.Use same amount sugar as the salt.Sprinkle 1/4to1/2 tsp of crushed red pepper on top.Use red pepper +/- for the heat factor you like.Add about 1 tbls. water cover simmer untill cooked down or slightly colored. Stir frequently but keep covered. Serve |
