Low GI rice salad, serve warm or cold Ingredients:
1 1/2 oz brown basmati rice |
1/2 onion, finely chopped |
1 stalk celery, chopped |
2 oz grapes |
2 oz raisins |
2 oz peas |
1 tsp almonds |
1 tsp olive oil |
1/4 teaspoon ground cumin |
1/4 teaspoon coriander |
1/4 teaspoon turmeric |
1 salt and pepper |
Directions:
1. Cook the onion and celery in the olive oil until softened and golden 2. Add the spices and cook for a minute longer to release the aroma 3. Cook the brown rice according to the instructions on the packet, (adding the peas at the last minute to defrost if frozen) drain and add to a mixing bowl with the onion/spice mix 4. Halve the grapes and add to the same bowl with the raisins, almonds and seasoning 5. Serve warm or cold with some salad leaves |
