Lovely low in calorie high in flavour accompaniment to just about everything! A favourite from the Classic 1,000 Calorie Counted recipes printed 11 years ago... still, some recipes stand the test of time! Ingredients:
1 lb red cabbage, shredded |
1 onion, thinly sliced |
1 eating apple, peeled, cored & sliced |
2 ounces sultanas |
salt |
fresh ground black pepper |
2 tablespoons water |
2 tablespoons vinegar |
Directions:
1. Layer the cabbage, onion, apple and sultanas in an ovenproof dish. Seasoning each layer with salt and pepper. 2. Mix the vinegar and water together and sprinkle over. 3. Cover with a piece of greasproof paper then the lid. 4. Bake in a preheated oven at 350F/180C (160C fan oven) for 90 minutes until tender. 5. Stir well before serving. 6. Can be cooked at higher temperature for shorter time or lower temperature for longer time - depening on what else you are cooking at the same time. |
