This makes a great side dish and you can either serve it warm or cold as a salad. Can make vegetarian with vegetable broth. Ingredients:
2 cups chicken stock |
2 cups apple juice |
1 tablespoon oil |
1/4 cup shallot, chopped |
1 cup dried apricot, chopped |
1 cup almonds, chopped and toasted |
1 tablespoon rosemary |
2 cups quinoa |
Directions:
1. In a small pot, combine stock and juice and bring to a boil. 2. Meantime, in a larger pot, saute shallots in oil for one minute then add the apricots and almonds and rosemary. 3. Warm through then add the quinoa, mixing it in. 4. Remove from heat and add in the boiling stock and juice. 5. Cover with plastic wrap and leave stand for 20 minutes and ta-dah! |
