Fruity Nutty Chicken Salad |

Here's a great way to use up leftover cooked chicken. You probably already have most of the ingredients on hand. You can save the pineapple juice when you open a can of pineapple. Just stick it in a little plastic baggie and put it on the door of your freezer compartment. Ingredients:
1 1/2 cups cooked chicken, chopped up |
1 cup unpeeled apple, chopped up |
3/4 cup chopped celery |
1/2 cup chopped pecans |
3 ounce package cream cheese, softened |
1/2 cup sour cream |
3 tbsp pineapple juice |
salt, to taste |
white pepper, to taste |
1 cup grapes (more if you like) |
lettuce leaves (i prefer dark lettuces) |
crackers of your choice |
Directions:
1. Mix together the chicken, apple, celery and pecans. 2. Mix cream cheese with the sour cream, juice, salt and pepper, Use salt and pepper to your taste, also depending upon how seasoned the chicken already is. 3. Stir this mixture into the chicken mixture. 4. Fold in grapes, cover and chill until serving time. 5. Serve chilled over lettuce leaves, with crackers on the side. |
