From a Family Circle Cookbook. I think I had a similar version once which was called 'Hawaiian Beef'. Ingredients:
1 tablespoon oil (for frying) |
2 large onions, chopped |
1 large apple, peeled, cored and diced |
500 g beef mince |
1 crushed garlic clove |
2 tablespoons flour |
2 -3 teaspoons curry powder |
1 cup beef stock |
1/2 cup sultana |
425 g pineapple in juice |
1/2 lemon, juice of |
salt |
pepper |
Directions:
1. Heat the oil and fry the onions until transparent. 2. Add the apple, meat and garlic, and stir until meat is lightly browned. 3. Stir in the flour and curry powder, cook over low heat for one minute. 4. Gradually add the stock and bring to the boil. 5. Add 1/4 cup of the pineapple juice. 6. Simmer for 30 minutes,. 7. Add sultanas, drained pineapple and lemon juice. 8. Simmer another 30 minutes. 9. Add salt and pepper. 10. Serve with rice. |
