A guesstimate for City Market's Israeli Couscous salad. dry couscous or dry whole wheat couscous, slivered almonds, dried apricots, sweetened, dried cranberries or raisins, water or orange juice (1/2 cup per 1/3 cup dry couscous), cumin, scallions, salt, ground black pepper cvt Ingredients:
1 1/3 cups dry couscous (94185) or dry whole wheat couscous |
2 cups water |
2/3 cup slivered almonds |
1/2 cup (packed) dried apricots, chopped, check packed weight |
2/3 cup sweetened, dried cranberries or raisins, microwaved in 1 cup water for 1 minute |
4 tbsp water, absorbed by fruit (do not add, check weight) |
1 teaspoon cumin |
3 scallions, thinly sliced with greens |
1 pinch salt |
1 freshly ground black pepper, to taste |
Directions:
1. Prepare couscous according to package directions. Combine all ingredients; toss. Serve at room temperature or chilled. |
